I found this recipe here. I'm not on Weight Watchers, but half of this recipe is only 2 points, which I've heard is pretty good. You can serve them with marinara sauce, but I preferred them plain.
3 medium zucchini sliced into long sticks
1 large egg white
1/3 cup seasoned bread crumbs
2 tablespoons parmesan cheese
1/4 teaspoon garlic salt
Preheat oven to 425.
Combine bread crumbs, parmesan and garlic salt. In another bowl, beat egg whites, then season with salt and pepper. Spray a cookie sheet with cooking spray.
Dip the zucchini sticks in the egg whites, then the bread crumbs. Place on the cookie sheet and spray more cooking spray on top. Cook for 20 minutes.
